The standout pasta is the warm fusilloni coated in a delicious green Marinda tomato sauce with pistachio and basil; simply superb! Lido 84 is renowned for their signature dish, the Rigatoni Cacio e Pepe en Vessie. The dish follows an ancient Roman cooking technique where pasta is cooked in a pig’s bladder, giving it a much firmer bite than typical “al dente” pasta. The bladder provides the perfect vessel, coating the pasta in a deliciously creamy emulsion of cheese and pepper. This quietly theatrical dish is a must-experience.
