Beautiful bite size appetisers at Autem restaurant in Milan

Autem is a spectacular restaurant located in the bustling Porta Romana district of Milan, Italy. Chef Luca Natalini is the owner and creative genius behind this phenomenal restaurant. For reasons unknown, Autem has until now escaped the spotlight of renowned global culinary organisations. That changed this year when Chef Luca debuted at the Best Chef Awards in Milan, receiving the prestigious ‘1 knife’ accolade – an award signifying a high standard of culinary skill.

What to Order at Autem Milan

Autem offers a range of menu options including à la carte as well as 9-course and 11-course tasting menus. Expect seasonal ingredients and dynamic dishes that evolve with produce availability. The tasting menu commences with scrumptious appetisers showcasing a light airy beetroot macron, an impeccable Piennolo tomato tartlet and a crisp waffle filled with delectable onion fondant and whipped beurre blanc. Mediterranean tuna is served in a light fermented tomato broth with smoked sesame oil. Autem’s take on a Russian salad features local market vegetables, buckwheat, red prawn and caviar. Signature dishes include the refreshing smoked eel salad and the superb ‘Pasta in Bianco’. Looks can be deceiving; this simple appearing pasta packs a flavour-punch, having been cooked in a 40-day aged bay leaf broth and finished with vermouth, vinegar and honey. An extraordinary pasta – easily among the best I’ve ever had the privilege of experiencing. Standout dishes include the spectacular savoury tarte tatin featuring Borgotaro porcini mushrooms – think rich umami marmite flavours – as well as the impressive pigeon course. Honouring a no-waste ethos, the pigeon is served in its entirety, with every element celebrated. Desserts include the creamy peach and lavender topped with crisp chocolate nibs as well as the ever-decadent chocolate souffle with extra virgin olive oil and Bourbon vanilla ice cream. Autem offers a fantastic selection of wines. 4-glass and 6-glass wine pairings are on offer to compliment the tasting menu experience. The tasting menu ends off with a delicious selection of petit fours.

Is Autem Milan Worth Visiting?

Autem’s interior exudes understated beauty, with a softly lit, romantic ambiance. The open kitchen adds a sense of theatre to the experience, while service remains impeccable; graceful yet warmly attentive. Chef Luca has faced numerous challenges, yet his tenacity and resourcefulness have elevated Autem into the extraordinary dining experience it is today. One of my top dining experiences of the year; Autem has truly arrived, poised to capture the world’s attention. Visit while you can, before the Michelin stars and accolades inevitably follow.
